Roasted fish has to be one of my favourite dishes. It’s simple, full of flavour and takes hardly any time at all. Perfect for when you just want to chill in front of the TV for the evening.
On Saturday, I told Aaron I’d rustle us up something quick in the kitchen seeing as we’d spent most of the afternoon sorting out our flat (mainly my magazine collection…what? I’m a writer!). So, with that in mind, I grabbed a handful of gorgeous veg, pulled out the fresh fish we’d bought earlier that day and got to work!
All you need for this beautiful, colourful meal is a handful of vine tomatoes, half a courgette, a red onion, a red pepper, half a lemon, 4 cloves of garlic and a handful of parsley to season. Oh and some fish of course. Turn your oven on to about 200°C.
Firstly, chop up your onion and pepper into slices and toss in frying pan with some olive oil. Cook for about 5 minutes until they’ve softened. Next, quarter the vine tomatoes and slice the courgette and pop them in too. While they’re cooking, season the fish with some salt and pepper, skin side up. Sprinkle a little parsley over the top. Grab a deep roasting pan and transfer all that lovely veg into the dish, then pop in the oven for about 5 mins.
Next, place the seasoned fish skin-side up on top of the veg and drizzle with some olive oil. Cut the lemon into 4 wedges and pop them in the dish along with the un-peeled garlic cloves. Cook for roughly 15 minutes. In this time, you can cook some rice to go with your fish if you want. Once 15 minutes is up, take the fish out and pop under the grill for a couple of minutes to crisp the skin.
There you go! Just pop your rice onto a plate, and serve your delicious fish and vegetables on the side.
